The original oysters Rockefeller was created in New Orleans in 1899 at Antoine’s restaurant.

It was named after John D. Rockefeller, the richest american at the time, for the intense richness of the sauce.

The original recipe is a well guarded secret so here at capeside we interpret this historical dish by creating a sauce of sautéed onions and bacon, a splash of white wine, fresh spinach, heavy cream, and finish with grated Parmesan. The Gulf oysters are topped with the sauce and broiled in the oven until bubbling.
